Grist Mill
This is a water-powered grist mill. Also see the "washing
machine" served by the same millrace. A mixture of corn and barley is being
ground in this photograph. Traditionally, the miller receives a small portion of the meal
as payment.
Corn meal is used to produce the traditional dish mamaliga. It is
essentially the same as the Italian polenta or cornmeal mush. It is prepared by
boiling the corn meal in water for about thirty minutes and baking in a casserole layered
with salty sheep cheese and often sausage. Several other versions exist, including
some where the cornmeal is boiled in milk. |
